Milk Chocolate Pudding Pie with Salted Peanut Crust PDF Print E-mail

Rich, sweet, smooth milk chocolate pudding in a crunchy crust with a touch of salt, topped with slightly tangy whipped cream and salted peanuts.

Ingredients

For the Crust:
1/4 cup (1 ounce) salted roasted peanuts (finely ground in a food processor or crushed in a bag with a rolling pin)
2 tablespoons sugar
3/4 cup (2.5 ounces) graham cracker crumbs (finely ground in a food processor)
4 tablespoons (2 ounces) unsalted butter, melted
3 ounces milk chocolate, finely chopped

For the Filling:
3 tablespoons sugar
3 tablespoons unsweetened cocoa powder, preferably natural
2 tablespoons plus 2 teaspoons cornstarch
1/8 teaspoon salt
2 cups whole milk
7 ounces milk chocolate, very finely chopped

A couple of tablespoons of salted roasted peanuts

Unsweetened Whipped Cream:
1  1/2 cups heavy cream
1 teaspoon pure vanilla extract (optional)

Directions

To make whipped cream: Using chilled beaters (or a whisk), beat the cream with the vanilla, if using, in a chilled bowl until it holds a soft shape. Beat until it holds a good shape but is not too stiff.

Position a rack in the lower third of the oven and preheat the oven to 350
