Ingredients:

8 ounces noodles, cooked until barely done and drained
1/2 cup egg substitute (or 4 egg whites)
2 eggs, beaten
1/2 cup canola oil
2 cups unsweetened applesauce
1/2 cup raisins or (or 1 cup fruit cocktail, well drained)
2/3 to 3/4 cup sugar
1/4 teaspoon cinnamon
1/2 teaspoon salt (lite salt OK)
Extra cinnamon for sprinkling
Extra sugar for sprinkling

Directions:

Preheat oven to 400 degrees. Grease 9 by 13-inch baking pan. (Cooking spray works well.)

In very large bowl, combine noodles, egg substitute, eggs, oil, applesauce, sugar, cinnamon and salt.  Mix together very well. Pour into pan.

In small dish, mix about 1 teaspoon cinnamon with 2-4 teaspoons sugar. Sprinkle mixture on kugel.

Bake for 45 minutes, or until kugel is golden brown.
